Who is Jaime Pesaque?

Jaime Pesaque, a Peruvian chef trained at Le Cordon Bleu and with a master’s degree from the Italian Culinary Institute (ICIF), built his career in MICHELIN-Starred restaurants in Italy and Spain, including El Celler de Can Roca. Upon returning to Peru, he ran the Al Grano restaurant before founding his most personal project in 2008: MAYTA, in Lima. MAYTA, which means “Noble Land” in Aymara, represents a contemporary vision of Peruvian cuisine, based on local traditions and ingredients, but with modern techniques.

In 2019, it entered the list of Latin America’s 50 Best Restaurants, where it currently ranks #13, and in 2020 it entered The World’s 50 Best Restaurants, ranking #39. That same year, it was named Best Restaurant in the World by The World Culinary Awards. Jaime has been recognized individually by The Best Chef Awards, ranking among the world’s 100 best chefs since 2021, and currently holds 2 Knives in this prestigious classification.

A tireless entrepreneur, he founded Jaime Pesaque Restaurants, which includes concepts such as Sapiens, 500 Grados and Mad Burger in Lima. He has taken his cuisine abroad with Callao in The Hague, Mad Burger in Miami, and in 2025 he has just opened NUNA, a Nikkei restaurant with an Andean soul and Japanese technique. Jaime also represents Peruvian cuisine at internationally renowned events such as Madrid Fusión and Gastromasa, consolidating his role as a global ambassador for Peruvian cuisine.
