
Renowned French pastry chef Nicolas Rouzaud, the creative force behind The Connaught Patisserie in London, will be among the distinguished names joining Gastromasa International Gastronomy Conference 2025 in Istanbul. Known for his elegant balance of tradition and innovation, Rouzaud brings his refined French pastry artistry—shaped through years at Le Bristol Paris, The Lanesborough, and The Connaught—to the Gastromasa stage, where he will share his vision of craftsmanship, precision, and the beauty of simplicity in contemporary pâtisserie.
Who is Nicolas Rouzaud?
Nicolas Rouzaud grew up in his family’s orchard, immersed in the seasons and nature. He spent his summers working in traditional bakeries in Toulouse. After discovering his passion for baking, Nicolas built his career in this field, participating in various apprenticeship programs to receive comprehensive training in the art of pastry making and traditional baking techniques.
He earned two CAP diplomas in pastry, chocolate, and ice cream, as well as baking, from Les Compagnons du Devoir, one of France’s most prestigious schools. In 2007, Nicolas moved to Paris and began working at the world-renowned Le Bristol Paris hotel. Managing a 19-person pastry team, Nicolas worked closely with master chef Laurent Jeannin, preparing special dessert menus for the hotel’s restaurants and the three Michelin-starred Epicure. These years provided him with both discipline and advanced knowledge and experience in the world of luxury gastronomy.
Nicolas later moved to London and began working as Head Pastry Chef at The Lanesborough. In 2017, he joined The Connaught team as Executive Pastry Chef. Since July 2023, Nicolas has continued his role as a consultant chef at The Connaught, while also heading his own brand, The Connaught Patisserie, by Nicolas Rouzaud.
