From the iconic Palet d’Or — a creation of fresh Issigny cream and 55% dark chocolate enriched with gold leaf — to the celebrated Président cake, originally crafted in 1975 to honor President Valéry Giscard d’Estaing at Paul Bocuse’s Legion of Honor ceremony, Bernachon’s creations embody both history and innovation.
Who is Philippe Bernachon?
Philippe Bernachon is a leading figure in Lyon’s gastronomic heritage. Grandson of the legendary Maurice Bernachon and Paul Bocuse, he represents the third generation of a family that has been crafting fine chocolate for over 60 years.
Although he first pursued studies in accounting, Philippe was soon drawn back to his family roots, guided by the passion for chocolate instilled in him by his father. Today, together with his two sisters, he continues the legacy of Maison Bernachon, developing its excellence and creativity while staying faithful to the artisanal Bean to Bar tradition.
Among the house’s iconic creations are the Palet d’Or—a dark chocolate ganache with fresh Issigny cream and a touch of gold leaf—and Le Président, a cake made of sponge, praline ganache with hazelnuts, and candied cherries soaked in cherry liqueur. The latter was created in 1975 for President Valéry Giscard d’Estaing on the occasion of Paul Bocuse receiving the Légion d’Honneur.
