
On November 6–7, Gastromasa 2025, held at the Haliç Congress Center under the theme “Stories of 10 Years,” will welcome Julien Royer, one of the most prominent figures in contemporary French cuisine. Born into a fourth-generation farming family, Royer spent his childhood harvesting from his family’s gardens, and this deep connection to nature continues to shape the foundation of his culinary philosophy today.
After beginning his career alongside culinary icons such as Michel Bras, Royer went on to build an international path that eventually led him to Singapore, where he founded Odette, a restaurant that has left a lasting mark on the global gastronomy scene. Awarded three Michelin stars, Odette is regarded as one of the most sophisticated ambassadors of modern French cuisine. Royer has also expanded his vision with Claudine in Singapore and a Michelin-starred French restaurant in Hong Kong, further advancing his global culinary journey.
Who is Julien Royer?
Born into a fourth-generation farming family, Julien Royer spent his childhood harvesting from his family’s gardens. It was here that he began to shape his culinary philosophy, which has since evolved through collaborations with producers from all around the world. After training under culinary icons such as Michel Bras, he built an international career. Later, he continued his journey in Singapore, where he founded Odette, a modern French restaurant located within the National Gallery, which has since been awarded three Michelin stars.
At Odette, Royer offers a constantly evolving menu, and he has also established Claudine, a French neo-brasserie in Singapore inspired by comforting home-style dishes. Additionally, Julien opened a Michelin-starred French bistronomy-style restaurant in Hong Kong, continuing his global expansion.
In 2017, Odette entered the Asia’s 50 Best Restaurants list at number 9, making it the highest new entry that year. That same year, the restaurant was also accepted into Les Grandes Tables du Monde. In 2019, Odette was awarded three Michelin stars and ranked first on the Asia’s 50 Best Restaurants list, becoming both Singapore’s and Asia’s Best Restaurant. In 2021, Odette climbed to number 8 on the World’s 50 Best Restaurants list. In 2022, the restaurant received the Gin Mare Art of Hospitality Award, while Chef Julien Royer was honored by Les Grandes Tables du Monde as Restaurant Manager of the Year. In 2023, Royer received the Estrella Damm Chefs’ Choice Award, presented by The World’s 50 Best Restaurants.

Bu yıl 6–7 Kasım tarihlerinde “Stories of 10 Years” temasıyla Haliç Kongre Merkezi’nde gerçekleşecek Gastromasa 2025, çağdaş Fransız mutfağının en önemli isimlerinden biri olan Julien Royer’i ağırlıyor. Dördüncü kuşak çiftçi bir ailenin çocuğu olarak büyüyen Royer, çocukluğunu ailesinin bahçelerinde ürün toplayarak geçirdi ve doğaya duyduğu bu bağlılık, bugün onun mutfak felsefesinin temelini oluşturuyor.
