One of the most prestigious gatherings of global gastronomy, Gastromasa Istanbul celebrates its 11th edition under the theme “Culture & Interaction,” bringing together different culinary cultures, creative approaches, and inspiring stories. Santiago Lastra, one of the most distinctive voices in contemporary Mexican gastronomy, will be among the speakers at Gastromasa 2026 with his approach that reinterprets Mexican culinary heritage through local and seasonal ingredients.

The Gastromasa International Gastronomy Conference & Expo will take place on November 26–27, 2026, at the Haliç Congress Center in Istanbul, bringing together world-renowned chefs, gastronomy professionals, and leading figures from the international hospitality industry.

Among this year’s speakers is Santiago Lastra, chef and founder of London’s KOL. Born in Mexico City and raised in Cuernavaca, Lastra developed his culinary perspective through extensive international experience. His career includes time at Mugaritz and working alongside René Redzepi on Noma Mexico in Tulum, while his travels across 27 countries helped shape his research-driven approach to ingredients and gastronomy.

In October 2020, Lastra opened KOL in London, creating a distinctive dialogue between Mexican culinary heritage and British produce. His cuisine remains rooted in the flavours and traditions of Mexico while adapting them to the ingredients available in Britain. Sea buckthorn, for example, is used in place of lime, while corn, chocolate and native chillies are among the few ingredients brought from Mexico.

KOL quickly became one of London’s internationally recognised restaurants. It earned its first Michelin Star in 2022 and entered The World’s 50 Best Restaurants at No. 73 that year, rising to No. 23 in 2023 and No. 17 in 2024. The restaurant ranked No. 49 in 2025. KOL was also named Best New Restaurant in Europe by La Liste in 2021, while Lastra received the GQ Food & Drink Awards’ Best Chef title and Three Knives from The Best Chef.

Lastra expanded his culinary world in 2024 with Fonda, a more casual expression of his vision. In 2026, he published his first book, Mexican Soul, bringing his perspective on Mexican culture, ingredients and cuisine to a wider audience.

At Gastromasa 2026, Santiago Lastra will share the journey behind his distinctive culinary language and his approach to reinterpreting Mexican heritage through the products and possibilities of a different geography.
