Who is Christian Le Squer?

Christian Le Squer, born on September 30, 1962, in the Brittany region of France, is one of the most respected chefs in contemporary French gastronomy. Spending his childhood on his uncle’s fishing boat, Le Squer grew up deeply connected to the sea, turning this natural heritage into the cornerstone of his cuisine. After receiving culinary training in Vannes, he gained experience in Paris’s prestigious restaurants and earned his first Michelin star in 1996 at Café de la Paix. Building on this success, he achieved three Michelin stars in 2002 at Pavillon Ledoyen.

In 2014, Le Squer took the helm of Le Cinq at the Four Seasons Hotel George V, where he once again earned three Michelin stars in a short time, leaving a lasting mark on the culinary world. Seamlessly blending his Breton roots with Parisian elegance, Le Squer possesses a vision that transforms local terroir into artistic plates. With signature dishes like onion gratin served with wine jelly or sea bass with caviar, he brings together emotional and technical depth, elevating gastronomy into an art form.

Today, Le Squer continues to influence not only the kitchen of Le Cinq but also the global culinary scene. In 2024, he joined La Maison 1888 in Vietnam as a consulting chef, establishing a presence in the Asian market. As of 2025, he is recognized as a “composer of flavor,” receiving a historic score of 19.5/20 from Gault & Millau for his perfect harmony of taste, tradition, and innovation. As one of the few chefs to maintain three Michelin stars for over 20 years, he remains at the pinnacle of French haute cuisine.
