One of the most prominent figures of Spanish cuisine in London, Michelin-starred chef of Sabor, Nieves Barragán Mohacho, is getting ready to open her new restaurant, Legado, in London’s Shoreditch district. Set to launch in partnership with JKS Restaurants, the venue will open its doors to food lovers on August 28.
A leading ambassador of Spanish cuisine in London, Mohacho will welcome guests to Legado, her new culinary project. Created in collaboration with JKS Restaurants, the restaurant will begin serving its first guests on August 28.
Named after the Spanish word for “legacy,” Legado reflects Mohacho’s personal culinary heritage. Located in the Shoreditch area, the venue consists of a main dining room and an open-air Taberna Bar that serves tapas and pintxos.
The menu at Legado will spotlight Spain’s local ingredients, lesser-known recipes, and traditional cooking techniques brought into a modern context. From Mediterranean prawns prepared with smoked paprika and Moscatel vinegar to fresh daily fish served Galician-style with Ajada sauce, every ingredient at Legado is carefully sourced.
The menu also features vegetable dishes inspired by Chef Nieves’s childhood memories. Highlights include the Legado Sandwich with Swiss chard, smoked cheese, and cured meat, as well as Valencian-style fideuà. The dessert menu offers seasonal and aromatic flavors like apricot sorbet, almond milk foam, and rosemary oil.
Chef Nieves Barragán Mohacho expresses her deep appreciation for the global recognition that Spanish cuisine has received, particularly in London. However, she notes that many dishes close to her heart are still largely unknown outside of Spain and deserve to be shared.
She describes Legado as a creative playground — a space where she can freely explore and reinterpret traditional flavors through the lens of her personal memories. With excitement and pride, she looks forward to introducing the unique tastes of Spain’s diverse regions to London diners.
Each dish is paired with fruit- and vegetable-based cocktails under the “3-Sip Serve” concept. Served in ceramics unique to various Spanish regions, these cocktails accompany an extensive wine list of 150 bottles. The wine selection focuses on boutique producers from both classic and emerging regions of Spain.
