Jumeirah’s Knightsbridge hotel, The Carlton Tower, will open a new flagship restaurant called Al Mare next month. The restaurant appointed Marco Calenzo, the last executive chef at Zuma, as the hotel’s new executive chef. The menu will interpret the dishes in a light and modern way with innovative creations as well as Italian classics.

Al Mare’s menu will include dishes such as seafood and guinea fowl, as well as Italian cheese and delicatessen products. Calenzo will procure most of its products from Italy, and some select products will be sourced from UK suppliers. Designed by 1508 London, behind the 18-month transformation of The Carlton Tower, Al Mare will also feature a bar and lounge area.
