Two-toque Gault&Millau restaurant The Artisan Il Ristorante has introduced a new menu, with fresh dishes showcasing quality ingredients. The restaurant, which is found at the foot of Waldorf Astoria, DIFC, is promising ‘authentic yet elevated dishes’ with flavours from around Italy with the introduction of its new plates. Applauded by G&M for exceptional dishes, with key ingredients shining through, without being overwhelmed by too many competing flavours, The Artisan’s new dishes sit next to favourite plates including truffle pizza, beef carpaccio and vitello tonnato.

The menu, from chef Francesco Magro, draws inspiration from regional Italy, from the Alps to Sicily, using quality ingredients to showcase traditional flavours.

New dishes include gnocchi alle vongole – a dish paying homage to Sicily, with potato dumplings complemented by carpet clams, Sardinian bottarga and parsley oil.

There’s also cappellacci all’ossobuco, a rich, hearty dish from Lombardy, with veal ossobuco, saffron, wild mushrooms and sage sauce.

When it comes to starters there are new plates including zuppa asparagi – a green and white asparagus sauce with prawn and lobster sauce, while there’s also a Hokkaido scallop tartare with strawberry, ginger, bergamot, white balsamic vinegar and fresh dill.

New to the dessert menu is cannoncini, a crispy pastry roll stuffed with a variety of flavours of cream and created tableside.

The new dishes are available on the à la carte menu.
