BOCA recently announced Patricia Roig as its new executive chef. Roig, will oversee both BOCA and La Taperia by BOCA. The chef has more than two decades of experience working in kitchens around the world. These include ROKA London, Lima Floral London, Central Restaurante in Lima, Peru and Newman Street Tavern, also in London.

Roig was also at highly-acclaimed Spanish restaurants Abantal Restaurante in Sevilla and Lillas Pastia in Huesca.

Roig joins BOCA from Blue Marlin Ibiza Sky Lounge and the Palocortado Restaurant group in Gran Canaria, Spain. Of her appointment, Omar Shihab, founder of BOCA said: “Patricia brings a wealth of experience. A native of Sevilla, Spain, [she] is focused on returning BOCA to its culinary roots while maintaining our commitment to sustainability, particularly in the kitchen.”

One of the chef’s first activations will be curating a “Taste of Spain” Iftar for Ramadan. This will highlight some of the chef’s philosophy around dishes that are “bold and intense”. Some of the dishes on the menu include Spanish puchero, a traditional soup made with chicken, beef shank, and fresh mint; escalivada, consisting of smoky grilled vegetables and axarquía Salad, made with confit cod, potato, and olives..

“As a conservationist herself, Patricia will continue BOCA’s long standing history of sourcing local ingredients, using lesser-known produce, and adopting a fresh perspective on kitchen waste. The restaurant’s sustainability journey is set to thrive under her leadership,” said the BOCA team.
