Two Michelin-starred Alex Dilling at Hotel Café Royal flips the switch on gastronomy with an exclusively intimate dining experience.
Featuring Dilling’s modern take on traditional French gastronomic cuisine, this intimate space overlooks the curvature of Regent Street – the perfect setting to indulge in this brand new destination within Hotel Café Royal. Comprised of only 34 seats, the acclaimed chef’s first self-titled restaurant is an exceptional exercise in sheer pleasure – and yes, booking is absolutely essential.

London born Alex Dilling discovered his fond admiration for food from a young age. Discovering various techniques and products throughout travel, Alex developed a curious and passionate palate from devouring the comforts of European cuisine.

His culinary journey began under the legacy of Alain Ducasse at Adour in New York. Mentored and guided by the esteemed Didier Elena and Tony Esnault, Alex and his team attained two Michelin stars in early 2012. Progressing through to the crown jewel of caviar restaurants, Caviar Russe, Alex founded his love for caviar of which remains to this day to be one of his most celebrated ingredients.

After returning to to the UK, Alex joined Helene Darroze and closely alongside Helene, led the culinary team as Executive Corporate Chef, assisting in the operational maintenance of the elite two Michelin stars between London and Paris. Alex continued to inspire and elevate the food scene in London with his curations at The Greenhouse, attracting an international crowd, who travelled the world to experience and endeavour the wonders of his luxurious menus.

Alex’s first standalone restaurant opened on the 1st Floor of Hotel Cafe Royal – overlooking Regent Street – on 1st September 2022. The restaurant will see Alex deliver the finest ingredients taking inspiration from French classics.
