Celebrity chef Degeimbre is making changes to the family of San restaurants, which he started in Brussels and also has branches in Sablon and Ghen. Young and successful chef Kevin Perlot opened VerTige yesterday by replacing San Bruxelles with a new sustainable concept. The young talent who has worked at chef Degeimbre’s 2 Michelin-starred restaurant L’air du Temps for 3 years wants to create a restaurant that is sustainable, modern, plant-based gastronomy that is indispensable in today’s world. According to the Food and Wine Gazette, VerTige promises to write the definition of tomorrow’s gastronomy as it will be based on nature and sustainability, with a minimal carbon footprint while sharing the know-how of craftsmen and artisanal producers in a minimalist and precise setting.
