Peruvian chef Pedro Miguel Schiaffino won the American Express Icon Award 2019 for Latin America’s 50 Best Restaurants. The chef presents his recipes in the restaurant Ámaz in Lima, where he combines information and ingredients from local experts in the depths of the rainforest. The chef’s work is based on his old knowledge of the Amazon and his gastronomic skills.

Peruvian chef Pedro Miguel Schiaffino said that: “The main cities of Latin America have been colonized by Europeans, so the way they see things, feed themselves is very European. In Peru, the state teaches mothers how to make their children in a place where there are no cows and goats. He teaches to make bread without wheat flour, but that’s completely wrong. They need to learn how to bake bread from Yucca or corn from the region.”

Schiaffino will be honored on Thursday (October 10th) in Buenos Aires, Argentina for his contribution to the Best 50 Restaurants of Latin America 2019, sponsored by S.Pellegrino & Acqua Panna. This year’s award ceremony will be held for the first time in Argentina after Colombia, Mexico and Peru.
