Selin Kiazim, the Turkish chef and restaurateur of the famous restaurant Oklava in London, said that with the opening of the restaurant on July 17, she would remove the optional 12.5% service charge and include it in the menu prices.

London restaurants, which have long applied a 12.5% service charge, have begun changes in their business practices by reassessing staff working conditions and wages due to the pandemic. Affected by these changes, successful chef Kiazim said they considered adding the optional service charge to their menu price for a long time and had switched to this practice in an attempt to “break the mould” after reviewing their business model during the quarantine process. The Broadway Market and Hill and Szrok restaurants have also joined the exchange, announcing that they would restructure their pricing after quarantine, Fine Dining Lovers reported.
