World-renowned chef Eneko Atxa, taking part in the international gastronomy conference Madrid Fusion, showed respect to nature and the producers with eight recipes centered on a single ingredient. “There are eight products to thank our eight producers,” said the chef of Azurmendi, which is considered the most sustainable restaurant in the world.

“Azurmendi kitchens do not start when we turn on the lights or the stove, but when the producers start to navigate to obtain the best fish or when those who work in the field begin their day,” Eneko says.
