German chef Björn Swanson, who opened his restaurant Fealt last fall and won his first Michelin star one month after opening, requested a “contact with the customer”. “Good food should be available for more than 10% of the population,” Swanson said.

Faelt chef Swanson, who opened its doors to customers in Berlin on October 1, said in his presentation at Madrid Fusión, “We were open for a few weeks and then closed for seven months. We don’t want to serve 10% of the population. Food must reach everyone.”
