Successful head chef Adam Handling has launched an al fresco, zero waste offshoot operating on the pavement in front of his recently reopened flagship Frog restaurant in London’s Covent Garden.

In his new concept, called Toad on the Road, celebrity chef Handling will offer his guests a range of dishes created using waste materials on the tasting menu at Frog by Adam Handling, which can accommodate up to 36 people outdoors. These include lobster rolls made using offcuts from Handling’s signature lobster in wagyu fat dish; ‘Nanny Sophie’s fried chicken’, which use the thigh meat not needed for the restaurant’s chicken main course; and fish finger sandwiches made from turbot trim.

According to Big Hospitality UK, options such as coffee negroni using coffee grounds leftover from Nespresso coffee pods served in the restaurant from failed pomme soufflés in the kitchen will also be included in the menu.

In March, the famous chef Handling, who announced that both Ugly Butterfly and The Frog Hoxton’s will close indefinitely due to the pandemic, reopened Frog by Adam Handling and Adam Handling Chelsea restaurants with the easing of pandemic measures.
