Due to open in late spring 2023, Iris is a unique restaurant located inside a floating orb in Hardangerfjord, Norway. The restaurant is helmed by Anika Madsen, a Danish chef known for her passion for discovering new ocean ingredients, and her commitment to sustainability.
Until recently she held the position of Head Chef at the lauded Fasangården restaurant in Copenhagen.
The restaurant will exist in an experience centre, Salmon Eye, which opened in 2022 and is themed around sustainable marine life.
The structure features a double-curved ellipsoid design, the silvery orb-like dome seemingly floating in the middle of the Hardangerfjord waters. The fjord itself is surrounded by stunning mountains and glaciers.
The menu will focus on ingredients from the sea with a focus on sustainability and the challenges facing the global food system.
