Winner of the 2016 Roux Scholarship, Harry Guy will open his first solo restaurant at the Wildes Chester hotel in the summer of 2022. Named X by Harry Guy, the restaurant will serve British cuisine with a capacity of 50 people, working with suppliers and farmers specifically in Cheshire.

Guy won the Roux Scolarship while working as head of support and development at the Eden Hotel Collection in Stratford-Upon-Avon, Warwickshire, and his award included working with chef Joshua Skenes at the three-Michelin-star Saison in San Francisco. Guy most recently worked as operations manager at Simon Rogan’s London restaurants Roganic and Aulis London.

“I’ve actually been creating my own perfect restaurant, from the food I’ve been preparing over the years to the look and feel of the place. My goal is to create something that feels really special. I couldn’t be more proud or more eager to open the doors right now,” Guy said.

It will be located in Wildes Chester, an 18-room boutique hotel complete with a restaurant, rooftop pool, sauna and terrace, which will also open in the summer of 2022.
