Discovering gastronomy by following his Burgundian grandmother’s skills in the kitchen and choosing his future profession when he was taken to Paul Bocuse’s kitchen at the age of 8, Sombardier has been adding more to his career for years with the experience he gained from an early age. Having trained in the kitchens of Michelin-starred names such as Marc Meneau, Bernard Constantis, Alain Dutournier, and Yannick Alleno, the successful chef decided to fly with his own wings in 2012 and started offering his own delicacies to his guests in Antoine’s kitchen in Paris. Awarded one star by Michelin Guide, Sombardier opened two bistros, Mensae and Sellae, in 2014 to serve ‘bistronomic’ delicacies.
