Three Michelin-starred El Celler de Can Roca in Girona, which has been voted the best restaurant in the world many times, wants to be the best restaurant for the planet, thanks to environmentally friendly measures. The Roca brothers, the owners of the restaurant, which participated in the international gastronomy conference Madrid Fusión, presented the restaurant’s project at the fair.

Owners of El Celler de Can Roca, Joan, Josep, and Jordi Roca, have been on a green path since 2016 when they became ambassadors for the UN Sustainable Development Goals. Roca Brothers started a project by improving energy efficiency, water, and waste management and establishing their vegetable garden. The restaurant is also involved in a local initiative to support small producers by educating young fishermen on sustainable fishing practices and providing an outlet for their food to be advertised to the public.

Speaking on the opening day of Madrid Fusión, Joan Roca said: “Now that the pandemic has changed the hours of the hospitality industry and diners have adapted – he said -, we have the opportunity to advance schedules to improve employees” so that the three-star restaurant has advanced the hours of dinners at 7:30 p.m. so that at eleven o’clock the service has ended. “It is working,” he has encouraged his colleagues.
