Although chef Daniel Humm wanted to make plant-based changes to the menu, this step was not supported by Claridge’s. Swiss chef and Claridge’s part ways after the hotel reject his vision of a vegan menu. Hotel officials, who say they respect the chef’s vision, Humm says that his principles are paramount.

 

Commenting on the separation, hotel officials said, “We completely respect and understand the culinary direction of a fully plant-based menu that Daniel has decided to embrace and champion and now wants to introduce to London. However, this is not the path we wish to follow, here at Claridge’s at the moment, and therefore, regretfully, we have mutually decided to go our separate ways.” Hotel management, which reflects traditional British luxury in its cuisine, is worried that a vegan menu will alienate its regular customers.

Sharing the news on his social media account, Daniel Humm said, “Standing behind this mission, and what we believe in, is most important and is unfortunately not something we can compromise on. The future for me is plant-based. It has never been more clear that the world is changing, and we have to change with it.”
