Nicolai Nørregaard is the self-taught chef and co-owner of the two-Michelin-starred Kadeau Copenhagen and Kadeau Bornholm, where he has become one of the leading voices of modern Nordic gastronomy. Born and raised on the Danish island of Bornholm, Nørregaard draws inspiration from the island’s raw nature, transforming local ingredients into refined culinary expressions through techniques such as fermentation, smoking, and preservation. Together with his childhood friends Rasmus and Magnus Kofoed, he opened the first Kadeau in 2007, turning a small seaside cottage into a gastronomic destination that celebrates the essence of Bornholm.
Since opening Kadeau Copenhagen in 2011, Nørregaard has brought this island philosophy to an international audience, earning two Michelin stars, a Michelin Green Star for sustainability, and a place among The World’s 50 Best Restaurants in 2025. His cuisine combines minimalism, craftsmanship, and emotion—each dish telling the story of Bornholm’s landscape and seasons. Through his work, Nørregaard has redefined Nordic fine dining, placing authenticity, locality, and the beauty of simplicity at the heart of contemporary gastronomy.
