Albert Adrià

Albert Adrià was born on October 20, 1969, in Hospitalet. Inspired by his brother Ferran Adrià, he left school in 1985 to join the elBulli kitchen. After two years of intense training, he turned his focus to pastry and completed internships at renowned pastry shops in Terrassa, Barcelona, and Paris. His 1998 book Los Postres de elBulli received critical acclaim. In 1997, he established elBullitaller, serving as its director for many years and leading its menu development processes. In 2006, he opened Inopia Classic Bar in Barcelona, one of the pioneers of the gastrobar concept. After leaving elBulli in 2008, he published Natura, directed the documentary A Day at elBulli, and in 2010, together with the Iglesias brothers, launched the elBarri project, which led to the opening of 41º, Tickets, Pakta, Bodega 1900, Niño Viejo, and Hoja Santa.

In 2015, he created Heart Ibiza, a project combining music, art, and gastronomy. The following year, he opened the London pop-up restaurant “50 Days by Albert Adrià,” followed in 2018 by Cakes & Bubbles, also in London. In 2019, he collaborated with Ferran Adrià and José Andrés on Mercado Little Spain in Manhattan. During the pandemic, he published Vegetales A Todo Color and Candy, and in 2021, co-founded the ADMO pop-up restaurant in Paris with Alain Ducasse. In 2022, he reopened Enigma after a two-year closure, presenting an innovative gastronomic experience that reflects his entire career. Today, he dedicates his time to running Enigma and developing R&D projects with various food companies.
