Marco Müller is one of Germany’s most creative and visionary chefs. His passion for nature began at a young age, picking fresh vegetables in his grandfather’s garden. This love of nature and curiosity led him to become the head chef and culinary director of Rutz, Berlin’s first and only three-Michelin-starred restaurant.
Müller has been overseeing the kitchen at Rutz since 2004 and has served as culinary director for both Rutz and Rutz Zollhaus since 2019. Throughout his career, he has worked in the kitchens of prestigious hotels and restaurants in cities such as Berlin, Storkow, and Bühlertal.
Marco Müller’s cuisine is based on a unique approach that focuses on naturalness, seasonality, and sustainability. His own “Nature & Aromas” menu consists of sophisticated and balanced dishes created with ingredients provided by nature, such as leaves, buds, roots, and resins. The origin of the products, the production process, and their impact on nature are fundamental considerations for him.
Known for his approach to creating simple yet profound flavors, Müller embraces sustainability in gastronomy not as a trend but as a way of life. In his kitchen, it’s not about luxury; instead, contrasts, vegetables, aromas, and robust bases (sauce foundations) take center stage.
Marco Müller has been honored with three Michelin stars and a Michelin Green Star, and is recognized for his contributions to sustainable gastronomy. In 2022, he was named “Restaurant of the Year” by Der Feinschmecker, “Chef of the Year” by the Rolling Pin Awards, and “Top Chef of the Year” by Aral Schlemmeratlas. He also ranked 51st on the 2022 Best Chef Awards list.
With his distinct culinary style, Müller brings a modern and sustainable approach to German cuisine. He has been described by chefs! magazine as “a pioneer of German regionalism.” Through his innovative reinterpretation of traditional dishes, he has emerged as a respected culinary visionary both in Germany and on the international stage.
